Chocolate Self Saucing Puddings - Episode 4
Who doesn't love chocolate! and with winter starting to creep in, its time to start firing up those warming winter desserts!

Most of my guests don't even know that they are eating gluten free with this recipe and it has become an extended family favourite
Chocolate Self Saucing Puddings
Makes 6
• 85 g white rice flour
Preheat oven to 180°C fan / 200°C
Sift together flours, bicarbonate, baking powder, caster sugar, and cocoa in a large bowl.
Whisk these ingredients to ensure they are well mixed.
In a separate bowl, mix together eggs, butter, milk and vanilla.
Add to dry ingredients, then mix until well combined.
Ladle into 6 greased ramekins. (Do not add too much, if needed use 7 ramekins).
Then to make the sauce combine brown sugar, and additional cocoa.
Spoon evenly onto the 6 ramekins.
Pour 1/4 cup of hot water into each ramekin, across the back of a spoon, so as to get the water to float on the top, not disturbing the mixture.
Place the ramekins, on a tray, and then into the oven for 25mins.

• 3 tbl soy flour
• 1 tsp bicarbonate soda
• 2 tsp baking powder
• 140 g caster sugar
• 1/2 cup cocoa
• 3/4 cup milk
• 2 eggs lightly beaten (regular sized)
• 40 g butter melted
• 1 tsp vanilla essence
Sauce
• 140 g brown sugar
• 2 tbl cocoa
• 1 3/4 cups hot water
