It's better than tabbouleh!

Searching for a gluten free tabbouleh led me to this recipe, which after some "Rie" touches I have included below. It was delicious and fresh and Myles comment was "It's better then tabbouleh". let me know what you think! 

  Gluten Free Tabbouleh
Serves 8-10

• 1/2 cup Quinoa grain cooked as per packert and chilled
• 1 punnet cherry tomatoes diced
• 1 Lebanese cucumber diced
• 6 spring onions finely chopped
• 1.5 cups flat leafed parsley chopped
• 1/2 cup mint chopped
• juice of 1 lemon
• 1 clove garlic crushed
• salt & pepper
• 2 tbsp olive oil


In a large bowl toss together tomatoes, cucumber, onions and herbs.
Stir in quinoa.
In a separate bowl combine oil, garlic, salt, pepper and lemon juice. Whisk well
Add dressing to salad and toss well.

The flavours improve overnight.
