Winter = comfort food
What is it about winter that makes us crave comfort food? soup, stews, Osso bucco, lasagne, roasts and not to mention puddings!
Last night Myles and I played host to some wonderful friends and their two very lively daughters. Barb had put in a special request for Sticky Date pudding. In my house, this means Gluten free of course! She had hoped to take some home but unfortunately, we ate it all!
so just for Barb, here is my recipe
Gluten Free Sticky Date Pudding
200 g dates chopped,
3/4 cup Castor sugar
1tsp bicarb soda,
2 eggs
60 g butter, softened
1 cup gluten free plain flour
1 tsp vanilla essence
300 mls water
golden syrup

Gluten Free Sticky Date Pudding
200 g dates chopped,

60 g butter, softened
1 cup gluten free plain flour
1 tsp vanilla essence
300 mls water
golden syrup
- Preheat oven to 165 degrees C. Grease 6 x 200ml ramekin dishes
- Combine dates and water in a saucepan. Bring to the boil and add bicarb soda. Remove from heat
- Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well
- Fold in flour
- Stir in dates and vanilla
- Pour into ramekins and bake for 25 minutes
- Allow to cool for 2-3 minutes (this helps get them out of the dish)
- Spike puddings with a skewer and drizzle generously with golden syrup. Serve with cream +/or ice cream
