Lime and Coconut Friands: Episode 1
Here is the recipe:
Lime and Coconut Friands
Ingredients:
6 egg whites
1/3 cup (40g) soy flour
1/2 cup (40g) coconut (shredded)
3/4 cup (90g) LSA meal
1.5 cup (240g) pure icing sugar
2 tbl lime juice
2 tsp fine lime zest
185g butter, melted
1/4 cup (10g) additional coconut
Method:
Pre -heat oven to 180 °C fan / 200 °C
Grease 12-hole friand pan (1/2 cup)
Whisk egg whites, using a fork, in a bowl until well combined and frothy. Add meal, sifted sugar and flour, butter, zest, juice, coconut. Stir until combined.
Divide mixture evenly among pan holes
Bake friands in middle of oven, for 10 minutes.
Remove from oven, and sprinkle each friand with additional coconut.
Bake further 10 minutes.
Stand in pan 5-10 minutes. Remove from pan and place on wire rack to cool.
Friands can be stored in airtight container for 3 days, or frozen for up to 1 month
