Waffles - Gluten Free. Episode 4.1

Who can resist a crisp, yet light and fluffy waffle with summer berries, mascarpone and maple syrup. Certainly not me! They are definitely a special treat. My sister-in-law serves them up on Christmas morning for breakfast. I certainly enjoy them all year round. It has taken a little bit of trial and error to get the gluten free batter "just right" in order to share it with you all.

Waffles are best eaten still warm from the waffle iron. the gluten free batter doesn't keep well, but if you have any cooked waffles left over, they can be frozen for another day. To reheat, place in your toaster on the "frozen" setting.

Each waffle iron has its own properties. I use a Tefal, with interchangeable plates. It cooks two (2) at a time, which is perfect for Myles and I. I  use half a cup of mixture per waffle. It is important not to over fill the plate, as the batter can just ooze out the sides and make quite a mess.

It is OK to use a commercial gluten free plain flour, but as they vary so much between brands, I have broken down the flour into the specific flours, as I want to make sure you get a consistent, crisp outside and fluffy inside each time.

The addition of natural yoghurt to the batter, gives a lighter batter too. If you are wanting a dairy free option, skip the yoghurt and add an extra 30 mls of dairy free milk.

Recipe
Makes 6

• 95 g rice flour
• 30 g potato flour
• 15 g tapioca flour
• ¾ tsp baking powder (GF)
• ¼ tsp baking soda
• ¼ tsp salt
• 1 egg, separated
• 1½ tbl vegetable oil
• ½ cup yoghurt
• 90 ml milk

Combine all flours, baking powder, baking soda, and salt in a large bowl.
In a separate bowl whisk the egg white until firm peaks.
In a third bowl, beat the egg yolk and oil until well combined. Add yogurt and milk and blend together.
Add the yoghurt mix to the dry ingredients and mix well. Gently fold in the egg whites.

Preheat your waffle iron. Add ½ cup of batter to each iron. There is no need to spread the batter out, as the top iron will do this for you. Cook for 4 minutes*

Serve with your choice of  mixed berries, banana, Nutella, mascarpone, yoghurt, maple syrup

* Cooking time will vary between waffle irons. Waffles are cooked when the steam stops escaping.
